HONDURAS MONTAÑA CONGOLÓN
Located in the Lempira Departement, Cerro Congolón is an area of significance among the people of Honduras, and is a nationally protected landmark. It acts as a home to over a dozen people we work with to produce this regional lot, with the quality reflecting the care they put in to the soil as well as the delicate micro-climate this area is known for.

COLOMBIA JOHN DIAZ GESHA
This high-quality coffee is part of Pergamino's Allied Producer Program, which aids us in paying premium prices for exceptional micro-lots, significantly benefiting producers in the region. This lot is a washed Gesha from John Diaz, which stood out on the table with prominent florals and citric acidity.

COSTA RICA LAS LAJAS ANAEROBIC
This deeply sweet microlot comes to us from our friends at Las Lajas. The SL28 became famous in Kenya and has proliferated since the early 1900s as the premier variety across the country, but it is now cultivated across Central America. We consider this lot to be experimental for its innovative anaerobic processing, bringing forward a deep sweetness and vibrant acidity, reminiscent of berries and dark chocolate.

ETHIOPIA BEKELE KECHARA ANAEROBIC
Bekele Kechara is a distinguished smallholder farmer from Murago, Ethiopia, whose unwavering commitment to quality has earned him a prominent place among Ethiopia's finest coffee producers. We have partnered with Bekele for years through shifting exporters, but have committed to purchasing his coffee throughout the changes. Expect notes of watermelon and red berries in this experimental process-forward cup.
