GEOMETRY

Geometry has been defined as "describing spaces that lie beyond the normal range of human experience." Soon it will also be defined as "that coffee from Onyx that I am in love with and completely redefined my relationship with coffee." It's our answer for everything and has two of our favorite coffees—a washed processed Ethiopian & Colombian. This blend has become one of our favorite coffees and used our café.

COLOMBIA EL JARDIN GESHA

This washed lot comes from Leonardo Henao, a dedicated coffee producer from Santa Bárbara, Antioquia, whose lifelong passion for coffee has driven him to refine his craft and pursue excellence, earning him the title of Champion of the Cup of Excellence in 2020. After selling his farm in 2022, he returned to coffee production in 2024 with the acquisition of Finca El Jardín, where he continues to apply his expertise while sharing his knowledge with fellow producers, fostering a thriving and diverse coffee culture in Colombia.

COLOMBIA SANDOVAL CHIROSO

This is another washed micro-lot from our friends at Pergamino coffee. Edward Sandoval produces coffee in Ibague, Tolima, which yields an altogether unique cup profile. Highlighting the unique terroir of Tolima, expect delicate melon and a tea-like tactile in this versatile coffee. We enjoy this coffee thoroughly as a filter offering.
